Quick and Easy Dinner Full of Your Favorite Ingredients
You can use rotisserie chicken or on the night you grill chicken, add extra chicken breasts to the pit to turn into tomorrow’s meal for Barbecue Chicken Quesadillas from Holly Clegg’s Too Hot in the Kitchen cookbook. Barbecue Chicken Quesadillas
Spruce up leftover chicken into a light, quick evening meal or fun appetizer. Serve with salsa, avocado and/or sour cream.
Servings 2 (1-tortilla) servings
Ingredients
- 1/3 cup chopped red onion
- 1/2 teaspoon minced garlic
- 1 cup packed baby spinach
- 1 cup shredded cooked skinless chicken breast
- 1/4 cup barbecue sauce
- 4 flour tortillas 8-inch
- 1/4 cup shredded part-skim mozzarella cheese
Servings 2 (1-tortilla) servings
Ingredients
- 1/3 cup chopped red onion
- 1/2 teaspoon minced garlic
- 1 cup packed baby spinach
- 1 cup shredded cooked skinless chicken breast
- 1/4 cup barbecue sauce
- 4 flour tortillas 8-inch
- 1/4 cup shredded part-skim mozzarella cheese
Instructions
In small nonstick skillet coated with nonstick cooking spray, sauté onion and garlic until almost tender, about 5 minutes. Add spinach, stirring until wilted.
In small bowl, combine chicken and barbecue sauce. Lay two tortillas flat and divide evenly with spinach mixture, chicken with sauce, and cheese. Top each with remaining tortilla.
In nonstick skillet coated with nonstick cooking spray, heat skillet and cook tortillas until light brown, several minutes, turn and cook on other side, until light brown and cheese is melted. Cut into fourths and serve.
